In this special program, you’ll be guided through a live demonstration of Nerikiri wagashi, led by expert confectioner and cookbook author, Toshiko Sugii Steffes. A Tokyo native who has been perfecting the craft of wagashi since 2010, Toshiko will share her expertise and passion for this ancient craft, as she demonstrates the meticulous process of creating these elegant, colorful sweets.
Nerikiri wagashi is a refined type of wagashi that uses a dough made from white bean paste and rice flour, which is molded into various shapes, often reflecting nature’s beauty, like flowers or seasonal motifs. Known for its smooth texture and delicate flavors, Nerikiri wagashi is especially popular for tea ceremonies and special occasions.
